Contemporary restaurant design at The Macallan Distillery: material, light, and texture create a precise, warm atmosphere.
With the TimeSpirit restaurant, the distillery opened by The Macallan in Speyside in 2018 gains an architectural highlight within. Designed by Rogers Stirk Harbour + Partners, the building with its distinctive grass-covered roofscape blends harmoniously into the Scottish Highlands. The interior was created by Studio David Thulstrup, continuing the architectural language inside: calm, precision, and a clear material logic define the atmosphere.
Thulstrup works with a deliberately reduced, tactile palette. Wood, stone, and metal form the foundation of the design, while anodized aluminum mesh adds targeted accents. Color and texture reference the whisky-making process: bronze reflects warm light, surfaces feel grounded yet precise. The result is a spatial composition that feels consistent and understated, without relying on effects.
GKD Metal Fabric as a Design Element
A central role is played by GKD architectural mesh, previously used in Thulstrup’s award-winning Ikoyi project in London. In TimeSpirit, the mesh panels serve not only as spatial dividers but also as structuring design elements. The metallic surface responds sensitively to incoming light, creating subtle layers and depth, while the clear grid logic of the joints supports the calm character of the space.
The spiral mesh LICORNE 21a, made of aluminum and anodized in Medium Bronze, was used. A total of 57 panels covering 573 square meters significantly shape the restaurant’s atmosphere. With an open area of 47%, the mesh balances transparent lightness with robust texture. The concealed mounting beneath the ceiling structure enhances the impression of calm and precision: transitions appear flush, surfaces closed yet permeable.
